Dapple Gray Beans

Dapple Greys – Ranch Style Beans

  • 1 lb. Dapple Grey Beans
  • 1 lb. Smoked Bacon, chopped
  • 1 large Onion, chopped
  • 1 Tbsp. ground Cumin
  • 2 cups Orange Juice
  • 1 Tbsp. minced canned chipotle chilies
  • 1 large Onion, thinly sliced

Clean and wash beans, soak overnight. Drain & rinse the beans.   Cook bacon in large pot until crisp. Remove bacon to paper towel. Save 3 Tbsp. bacon grease in small bowl. Cook onion and cumin in remaining bacon grease for 5 min. Stir in juice and chilies, boil 5 min. Add beans and cover with fresh water; bring to boil. (Do Not add bacon yet!)

Cover and reduce heat to medium and simmer about 2 hours. Uncover and simmer until beans are tender and thick. Stir in bacon. Combine reserved bacon drippings and sliced onions in skillet. Sauté until brown. Serve over beans, Season to taste with Sea Salt and Pepper.
