For Chefs – Fresh Sheet

CHEFS & RESTAURANT ACCOUNTS

We love to work with chefs who value locally-sourced, high quality ingredients. We custom harvest for you the evening before or day of delivery, wash and chill your produce to ensure best shelf life, and deliver it to your kitchen. We offer a set delivery schedule on Tuesdays, and you are always welcome to pick up your order from us at our Farmers Market booth in Green Bay on Saturday mornings during the market season (June – October).

We enjoy growing new and experimental heirloom crops, and love hearing about heirloom produce you are looking for. There is potential for us to custom grow a particular heirloom crop. Please note that custom growing needs must be discussed early in the year before the start of the season, so we can add it to our crop plan and seed orders.

CATERERS

We are happy to work with you to meet your special event produce needs! If you are interested in sourcing from us for an event, we recommend that you get added to our weekly fresh sheet email so you have a sense of what we have available through the seasons. Please contact us at least 5 days prior to when you need to receive your produce so we can plan to harvest for you (ordering based off the fresh sheet is highly recommended).

SEASONAL AVAILABILITY

What produce we have available shifts and changes with the seasons. We are getting better at season extending to increase the season for key crops. Everything we sell will be extremely fresh and reflect the current season. You can see in the chart below the usual seasonality for each type of product. Of course availability in the chart does not guarantee availability and is always subject to Mother Nature’s good graces.

Please also note that we are a small farm with limited acreage, and sometimes we will simply sell out of a product because demand is higher than we anticipated. We work very hard to communicate clearly about gaps in availability and try to give you warning in case you need to source elsewhere until a product is available again. We plant all season long, so chances are what you want won’t be gone for too long.
